Chicken Wings 2 Ways | Caribbean Gold and Jalapeno Parmesan Chicken Wings

In today’s recipe I’ll show you how to make chicken wings in the Big Easy Oil-Less Fryer using two different recipes: Caribbean Gold and Jalapeno Parmesan. You can also make these wings on your grill, smoker or in the oven.

Caribbean Wings and Parmesan Wings 

Ingredients for both Recipes to make Crispy Wings Skin (per 20 wings)

  • 2 tablespoons Kosher salt
  • 2 teaspoons baking powder

Caribbean Gold Wing Sauce Ingredients

Dry Seasoning Ingredients

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 tablespoon garlic powder
  • 1/2 teaspoon ground cloves
  • 1 teaspoon black pepper
  • 1 teaspoons Kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon ground allspice

Jalapeno Parmesan Wing Ingredients

  • 6 tablespoons butter
  • 1 cup Stubb’s Spicy BBQ sauce, more info here https://www.armadillopepper.com/products/stubbs-spicy-bar-b-que-sauce
  • 1 cup grated Parmesan cheese
  • 4 Jalapenos, minced
  • Stubb’s Chicken Spice Seasoning (or your favorite chicken seasoning) to taste (approx. 2 tablespoons)
  • Chopped parsley for garnish

Caribbean Gold Recipe Instructions

  1. Rinse the wings and pat dry with paper towels.
  2. The night before your cook, mix 2 tablespoons and 2 teaspoons baking powder (for up to 20 wings).
  3. Place the wings on a raised wire rack over a baking pan and apply the salt/baking powder mix.
  4. Place the wings in the refrigerator overnight.
  5. The next day, mix the dry seasoning ingredients together and sprinkle on both sides of the wings.
  6. Place the wings in the pre-heated Big Easy Oil-Less Fryer and cook until done (internal temperature of 165 degrees F).
  7. While the wings are cooking, melt the butter in a sauce pan over medium heat. Stir in the remaining sauce ingredients.
  8. Simmer the sauce 5 minutes until the ingredients are incorporated.
  9. When the wings are done cooking (55 minutes for this cook), toss in the sauce.
  10. Plate and serve!

Jalapeno Parmesan Recipe Instructions

  1. Rinse the wings and pat dry with paper towels.
  2. The night before your cook, mix 2 tablespoons and 2 teaspoons baking powder (for up to 20 wings).

  4. Place the wings in the refrigerator overnight.
  5. The next day, sprinkle your favorite chicken seasoning on the wings. I used Stubb’s Chicken Spice seasoning.
  6. Place the wings in the pre-heated Big Easy Oil-Less Fryer an cook until done (internal temperature of 165 degrees F).
  7. While the wings are cooking, add the BBQ sauce and jalapenos to a pan over medium heat.
  8. Add the butter and stir until melted. Then, slowly add in the Parmesan cheese while stirring until melted.
  9. When the wings are done cooking (55 minutes for this cook), toss in the sauce.
  10. Plate and serve!
